Crystallum is the new venture created by the sons, Andrew and Peter-Allan, of Bouchard Finlayson's pioneering Peter Finlayson. It's a boutique winery with tiny production and a real focus on top quality. The Clay Shales Chardonnay (650 bottles produced and sadly sold out) is a stunner and this, their single vineyard Pinot Noir, is a belter too. 2500 bottles were produced of the Cuvee Cinema and I recently scored the wine 9.5 out of 10 - almost unheard of for me. It has a superb nose - the perfect balance of ripe cherry and berry fruit with savoury undertones. This follows through onto the palate - there is an excellent mouth feel being both light yet intense at the same time, with many layers of flavour. Perfectly balanced with good acidity and a touch of grip, the wine has good length of finish. It's a lovely wine and my wine of the day at that particular tasting. The downside being we don't get much of it.....
