Chapoutier's forays into regions away from his Rhone stronghold have shown fairly mixed results (I was not a massive fan of his Aussie wines), however there is one key element to all the vineyard sites he takes on and that is an insistence on Organic and Biodynamic practices both in the vineyard and winery.

Bila Haut is a venture that began in 2000, with several sites surrounding the village of Latour de France (nothing to do with cycling apparently, or 1st Growth Bordeaux for that matter) identified for their very old vines growing three of Southern France's most classic varieties, Syrah, Grenache and Carignan. The wine is super, a deep red in colour with a nose showing all the gently spicy black and red fruits and rustic charm you need, the palate is a balance of tangy blackberry and raspberry with a herbaceous edge and enough punch to sit with a hearty stew or grilled red meats.
