Samas is the white darling of the much revered and fast-becoming cult operation Agricola Punica, a collaborative effort from Sardinian winery Santadi, famed Sassicaia winemaker and oenologist Giacomo Tachis as well as the respective bosses of the two businesses, Antonello Pilloni & (deep breath) the Marchese Nicolo Incisa della Rocchetta.
Using groundbreaking techniques to super cool the grapes using dry ice prior to crushing then leaving the must to ferment on the fining lees for 40 days at a stable 16 degrees not to mention pre-dawn havesting and resting in special concrete vats prior to bottling without fining or filtration you have yourself one hell of a sleek, fine white wine. Delicate and refined with subtle elderflower notes over the ripe lemon of the Vermentino (80%) and the papaya of the Chardonnay (20%). Minerally, lightly saline, beautifully fresh and really classy, matched with a bowl of fruits de mer you'll be in heaven.
