This Pecorino is based on a rare white variety native to Les Marches that was almost extinct a decade ago and so called because the ripe bunches of grapes resemble the face of a woolly sheep or because the local Pecorino sheep nibbled the grapes.
This is a waxy, almond flavoured wine wrapped around a bright, mineral core with pear, apple and lime notes.
